Cilantro Lime Street Corn Relish
Instructions:
- Prepare the Corn: Start by cutting the kernels off 4 ears of corn. You can do this by standing each ear of corn upright and slicing downwards with a sharp knife.
- Combine Ingredients: In a large mixing bowl, combine the corn kernels, diced cucumber, and diced cherry tomatoes.
- Add Lime Juice and Seasoning: Squeeze the juice of one fresh lime over the vegetables. Sprinkle 1 tablespoon of Tone’s® Cilantro Lime seasoning on top.
- Mix with Mayonnaise: Add 1 cup of mayonnaise to the bowl. Gently stir all the ingredients together until everything is evenly coated with the lime juice, seasoning, and mayonnaise.
- Chill and Serve: For the best flavor, cover the bowl and refrigerate the relish for at least 30 minutes to allow the flavors to meld together. Serve chilled as a delicious side dish or topping for grilled meats or tacos.
