Springtime Produce – What’s In, What’s Out?

Springtime is here!  While we are all ready to jump for joy because the weather is finally becoming promising, what we’re really excited for is all of the fresh produce!  Let’s take a look at what we’re saying BYE to (all the winter foods we’re sick of) and what produce will be filling up our plates!

Out: Root Veggies

  • Carrots

  • Beets

  • Turnips

  • Rutabagas

  • Parsnips

  • Radishes

While it’s unnecessary to eliminate staples like carrots and radishes, try some of these options instead!

In: Fresh Picks

  • Asparagus

  • Artichokes

  • Peas (sugar snap, snow peas, shelling peas)

  • Fava beans

Out: Brassicas (cold-hardy greens and cruciferous veggies):

  • Kale

  • Cabbage

  • Brussels sprouts

  • Collard greens

  • Broccoli

  • Cauliflower

In: Leafy Greens

  • Spinach

  • Arugula

  • Swiss chard

  • Lettuce (butter, romaine, red leaf, etc.)

  • Mustard greens

  • Watercress

Out: Hearty veggies

  • Winter squash (butternut, acorn, kabocha, spaghetti)

  • Pumpkins

  • Celery root (celeriac)

  • Fennel

In: Alliums

  • Green onions (scallions)

  • Leeks

  • Spring onions

  • Ramps (wild leeks – super seasonal!)

  • Garlic scapes (toward late spring)

Out: Certain Fruits

  • Pomegranates

  • Pears

  • Apples (late fall harvest, but store well through winter)

  • Persimmons

  • Cranberries (late fall into early winter)

In: Seasonal Fruits

Early Spring Fruits (March–April)

These are often late-winter holdovers or early risers:

  • Citrus

    • Oranges

    • Lemons

    • Limes

    • Grapefruits

    • Tangerines

    • Blood oranges

  • Pears (some varieties still in season)

  • Rhubarb (technically a veggie but treated like a fruit in desserts!)

Mid to Late Spring Fruits (April–May)

As it warms up, you start seeing more sweetness:

  • Strawberries

  • Cherries (late spring)

  • Loquats

  • Pineapples

  • Mangoes (some varieties start their peak)

  • Apricots (late spring in warmer areas)

During spring, it’s our goal to highlight all of these delicious (and somewhat short-lived) produce items in our recipes.  After all, what would be weirder than eating pumpkin pie in springtime?  Let’s take a took at how to incorporate a few of these fruits/veggies into your meal plan!
