Notes on Monosodium Glutamate (MSG)

Mighty Salt is made of two simple ingredients – salt, and monosodium glutamate, or MSG.  What exactly is MSG?  In short, MSG is a flavor enhancer made from glutamic acid, which is a naturally occurring amino acid found in food favorites like tomatoes, mushrooms, cheese, soy sauce, and meat.

MSG is just the concentrated version of that natural glutamate.

Originally, MSG was made by extracting glutamate from seaweed.  Today, it’s produced through fermentation of starches (like sugar beets, corn, or sugar cane), similar to how yogurt or vinegar is made.

Despite old myths, MSG is safe for the vast majority of people. Extensive scientific reviews (by the FDA, WHO, and others) have found no evidence of harmful effects in normal consumption.
