Preheat oven to 425 degrees.
Whisk together eggs, milk, Weber® Roasted Garlic Asiago Seasoning, and Member’s Mark™ Sea Salt and Ground Black Pepper to taste. Set aside.
Spray a medium oven-safe skillet with cooking spray. Cook the chopped bacon until crispy, then drain on paper towels and set aside.
In the same skillet, add the olive oil, spinach, and diced tomatoes. Cook until the spinach is wilted, about 3 minutes. Add in the egg mixture and bacon, and stir to combine.
Let cook, without stirring, for about 2 minutes, just until the edges are set.
Place the entire skillet in the oven and cook for 15 minutes, or until the eggs are set and slightly golden.
Top with some additional Weber® Garlic Asiago Seasoning. Slice, serve and enjoy!
