Zesty Sheet Pan Lemon Pepper Salmon and Asparagus

Looking for a recipe to create this Friday that doesn’t involve frying fish?  This Zesty Lemon Pepper Salmon and Asparagus will hit the spot!  This is a simple yet flavorful dish that combines tender, flaky salmon fillets with fresh asparagus spears, all seasoned with zesty Tone’s® Lemon Pepper Seasoning.

Ingredients

  • lbs Salmon, skin on
  • tbsp Olive oil, divided
  • 1 tbsp Fresh lemon juice
  • 4 cloves Garlic, minced, divided
  • 3 tsp Tone's® Lemon Pepper Seasoning, or more if desired
  • ½ Lemon, thinly sliced
  • 1½-2 lbs Asparagus, ends trimmed
  • ½ cup Parmesan cheese, finely shredded

Instructions

  • Preheat oven to 400°F. Line a rimmed 17 by 12-inch baking dish with parchment paper. Place salmon in center of pan.
  • In a medium bowl, whisk together 1½ tbsp olive oil, lemon juice, 2 cloves garlic, and 2 tsp Tone's® Lemon Pepper Seasoning. Brush evenly over top of salmon, then sprinkle with additional Tone's® Lemon Pepper Seasoning, if desired. Top with lemon slices.
  • In a large bowl, toss asparagus with remaining 1 tbsp olive oil, remaining 2 cloves garlic, and 1 tsp Tone's® Lemon Pepper. Place asparagus around salmon on the sheet pan. 
  • Bake for 10 minutes. Remove from oven, toss asparagus, then sprinkle asparagus with parmesan. Return to oven and bake until salmon has cooked through, about 5 - 10 minutes longer. Cut salmon into equal portions. Serve warm.
