1lbBoneless, skinless chicken breast
2clovesGarlic, minced
2tbspTone's® Taco Seasoning
1tbspOlive oil
1 box (6.9 oz)Yellow rice, cooked according to package directions
8leavesRomaine lettuce, rinsed
1can (15.5 oz)Pinto beans, drained and rinsed
1Medium avocado, diced
1Medium tomato, diced

In a large bowl, add the chicken, garlic, olive oil, and Tone's® Taco Seasoning. Place in fridge and let marinate for at least 15-30 minutes or up to 24 hours.
While the chicken is marinating, cook the yellow rice according to the package's directions. Set aside.
Remove chicken from marinade and discard marinade. Place chicken in a large pan over medium-high heat. Cook chicken until it is no longer pink on the inside, about 9-10 minutes per side (or until it has reached an internal temperature of 165℉).
To assemble the lettuce wraps, divide the rice evenly between the 8 pieces of lettuce. Next, top with the pinto beans. Add the chicken, avocado, and tomato to each lettuce wrap. Add any of your favorite taco toppings, and enjoy!
