Chicken Taco Lettuce Wraps

Tone's® Taco Seasoning amps up the chicken's flavor while lettuce replaces tortillas for a healthy alternative. Add yellow rice, pinto beans, avocado, and tomato for tasty and nutrient-packed meal!

Ingredients

  • 1 lb Boneless, skinless chicken breast
  • 2 cloves Garlic, minced
  • 2 tbsp Tone's® Taco Seasoning
  • 1 tbsp Olive oil
  • 1 box (6.9 oz) Yellow rice, cooked according to package directions
  • 8 leaves Romaine lettuce, rinsed
  • 1 can (15.5 oz) Pinto beans, drained and rinsed
  • 1 Medium avocado, diced
  • 1 Medium tomato, diced

Instructions

  • In a large bowl, add the chicken, garlic, olive oil, and Tone's® Taco Seasoning. Place in fridge and let marinate for at least 15-30 minutes or up to 24 hours.
  • While the chicken is marinating, cook the yellow rice according to the package's directions. Set aside.
  • Remove chicken from marinade and discard marinade. Place chicken in a large pan over medium-high heat. Cook chicken until it is no longer pink on the inside, about 9-10 minutes per side (or until it has reached an internal temperature of 165℉). 
  • To assemble the lettuce wraps, divide the rice evenly between the 8 pieces of lettuce. Next, top with the pinto beans. Add the chicken, avocado, and tomato to each lettuce wrap. Add any of your favorite taco toppings, and enjoy!
