Corn and Potato Chowder

Ingredients

  • 4 slices Thick cut bacon, diced
  • 2 stalks Celery, sliced
  • 2 lbs Red potatoes, cut into 1⁄2-inch pieces (6 c)
  • 4 cups Water
  • 2 Member’s Mark™ Chicken Bouillon Cubes
  • 1 Member’s Mark™ Bay Leaf
  • 1 tsp Member’s Mark™ Thyme
  • 1 tsp Member’s Mark™ Spanish Style Paprika
  • ½ tsp Member’s Mark™ Fine Garlic Powder
  • ½ tsp Member’s Mark™ Onion Powder
  • ¼ tsp Member’s Mark™ Fine Ground Black Pepper
  • 1 (12 oz) package Frozen corn, thawed
  • cups Half and half
  • 1 tbsp Member’s Mark™ Chopped Chives

Instructions

  • Cook bacon in 5-quart stock pot until crisp. Remove bacon, leaving drippings in pot.
  • Add celery and cook 4 minutes or until softened. Add potatoes and cook 2 minutes.
  • Stir in water, Member's Mark™ Chicken Bouillon Cubes, Member's Mark™ Bay Leaf, Member's Mark™ Thyme, Member's Mark™ Paprika, Member's Mark™ Garlic Powder, Member's Mark™Onion Powder, and Member's Mark™ Fine Ground Black Pepper.
  • Bring to a boil, reduce heat, and simmer 15 minutes or until potatoes are tender.
  • Return bacon to pot. Stir in corn, half and half and Member's Mark™ Chives and simmer 5 minutes.
