Lemon and Feta Grilled Asparagus

Ingredients

  • 1 lb Asparagus fresh, trimmed
  • 2 tbsp Olive Oil
  • ½ cup Feta crumbled
  • ¼ cup Pine Nuts toasted
  • 1 Lemon juice
  • Mighty Salt™ to taste

Instructions

  • Start your grill and preheat it to medium-high heat.
  • In a large bowl, toss the trimmed asparagus with olive oil. Make sure each spear is well-coated. Next, season the asparagus with Mighty Salt™ to taste, making sure to add just enough for flavor without overwhelming the dish.
  • Once the grill is hot, place the asparagus directly onto the grill grates. Grill until the asparagus is tender and develop char marks, about 7-10 minutes.
  • Once the asparagus is done grilling, move it to a serving platter. Drizzle the juice of one lemon over the asparagus, making sure to coat it evenly. Next, sprinkle the crumbled feta cheese and roasted pine nuts on top for a deliciously creamy and crunchy finish.
