6 ozFresh raspberriesplus additional for garnish

1½tspFresh lemon juice
1bottle (750 ml)Prosecco chilled

In a small food processor, purée raspberries, sugar, water, and lemon juice. Strain through a fine-mesh sieve, being sure to press the raspberries down to extract as much juice as possible. Discard solids.
Place 3 Tbsp. raspberry purée into 4 champagne flutes.
Slowly pour Prosecco to fill flutes halfway (Prosecco will fizz up). Stir to combine, then top off flutes with more Prosecco, stirring as needed. Garnish with fresh raspberries.
