Weber® Roasted Garlic Asiago Skillet Frittata and Crispy Skillet Potatoes

What makes frittatas so great? You can serve them for literally any meal of the day, and they're completely customizable! This recipe uses thick cut bacon, spinach, diced tomatoes, and Weber® Roasted Garlic Asiago Seasoning for a savory, cheesy flavor. Serve along with our Crispy Skillet Potatoes and some fruit for a complete meal!

Ingredients

For the Frittata

  • 5 Large eggs
  • 1/2 cup Milk
  • 3 tsp Weber® Roasted Garlic Asiago Seasoning
  • Member’s Mark™ Sea Salt & Ground Black Pepper, to taste
  • 4 slices Hormel® Black Label Thick Cut Bacon, chopped
  • Pam® Original Cooking Spray
  • 1 tbsp Bertolli® Extra Virgin Olive Oil
  • 2 cups Fresh baby spinach
  • 1 can (15 oz) Hunt's® 100% Petite Diced Tomatoes, drained

For the Crispy Skillet Potatoes

  • 1 lb Medium red or Yukon Gold potatoes
  • 2 tbsp Wesson® Vegetable Oil
  • 2 tsp Weber® Roasted Garlic Asiago Seasoning
  • 1 tsp Member’s Mark™ Sea Salt
  • Member’s Mark™ Ground Black Pepper, to taste

Instructions

For the Frittata

  • Preheat oven to 425 degrees.
  • Whisk together eggs, milk, Weber® Roasted Garlic Asiago Seasoning, and Member’s Mark™ Sea Salt and Ground Black Pepper to taste. Set aside.
  • Spray a medium oven-safe skillet with cooking spray. Cook the chopped bacon until crispy, then drain on paper towels and set aside.
  • In the same skillet, add the olive oil, spinach, and diced tomatoes. Cook until the spinach is wilted, about 3 minutes. Add in the egg mixture and bacon, and stir to combine.
  • Let cook, without stirring, for about 2 minutes, just until the edges are set.
  • Place the entire skillet in the oven and cook for 15 minutes, or until the eggs are set and slightly golden.
  • Top with some additional Weber® Garlic Asiago Seasoning. Slice, serve and enjoy!

For the Crispy Skillet Potatoes

  • Quarter potatoes lengthwise, then cut each piece crosswise into 1-inch wide chunks.
  • Heat vegetable oil in a 10 to 12-inch cast iron or non-stick skillet over medium heat until shimmering. Add the potatoes, arrange in a single layer cut-side down, and season with 1 teaspoon Weber® Roasted Garlic Asiago Seasoning and ó teaspoon Member’s Mark™ Sea Salt.
  • Cover with a tight fitting lid and cook undisturbed until the potatoes are tender and the bottoms are golden brown, about 20 minutes.
  • Uncover and flip each piece with tongs to a second cut side. Season with remaining Weber® Roasted Garlic Asiago Seasoning and Member’s Mark™ Sea Salt and Member’s Mark™ Ground Black Pepper to taste.
  • Increase the heat to medium high and cook uncovered until the second side is golden brown, 5 to 10 minutes more, moving the pieces around as needed so they brown evenly.
  • Taste and season with more Sea Salt and Ground Black Pepper, as needed.
