Add the salmon to the base of a food processor and pulse until broken down into smaller pieces. Transfer 3/4 of the shredded salmon to a large bowl and pulse the remaining salmon until a paste forms. Add the salmon paste, seasonings, and lemon juice and mix until combined.
Line a plate with parchment paper. Divide the salmon mixture into 4 equal patties.
Heat the vegetable oil in a large skillet over medium heat. Add the salmon patties and cook until golden brown on the bottom. Flip and cook until golden brown. Be careful not to overcook the salmon. Each side should take about 3-4 minutes to cook.
While the patties cook, make the seasoned sauce. In a small bowl, stir together the mayonnaise, chives, homemade seafood seasoning, and lemon juice.
Spread the seasoned sauce on the cut sides of the buns. Add the salmon burgers. Top with desired toppings- cheese, tomato, avocado, red onion, lettuce, and more!
