Place the potatoes into an ice bath and leave for a minimum of 1 hour. This will remove the starch from the potatoes.
In a large pot or Dutch oven, heat vegetable oil to 375℉.
Fry potatoes until they are a deep golden brown - about 10-12 minutes.
