Ingredients

  • Member's Mark™ Organic Extra Virgin Olive Oil for muffin pan
  • 6 Eggs large
  • 1 cup Member's Mark™ 4% Cottage Cheese
  • ½ tsp Mighty Salt™
  • ½ cup Red Bell Pepper diced
  • 3 cups Baby Spinach cut/ torn
  • Member's Mark™ Black Pepper Grinder to taste

Instructions

  • Preheat the oven to 350°F and grease a nonstick muffin pan with olive oil.
  • In a blender, place the eggs, Member's Mark™ 4% Cottage Cheese, Mighty Salt™, and a few grinds of Member's Mark™ Black Pepper Grinder to taste. Blend until smooth. You can also put these ingredients in a bowl and use an immersion blender to blend.
  • Roughly chop or tear the baby spinach. Evenly divide the spinach and diced red peppers among the cups of the muffin pan. Pour the egg mixture evenly over the spinach and red peppers in the cups of the muffin pan.
  • Bake for 20 minutes or until the eggs are set. Let cool for 5 minutes before removing from the muffin pan.
