Fill a large pot with 4 quarts of water and bring it to a boil over medium-high heat. Stir in onion, garlic, Homemade Seafood Seasoning, and thyme. Let sit for a few minutes.
Add potatoes and season with about 1 tbsp of salt. Let cook until potatoes are almost tender, about 10-15 minutes.
Add corn and let cook for 3 minutes, then add sausage and let cook for 4 minutes.
Gently stir in shrimp and cook until pink, about 1-2 minutes.
Reserve about ½ cup of the broth for serving and drain the rest of the liquid. Spread the mixture on a large baking sheet or serving platter. Drizzle with melted butter and lemon juice. Sprinkle with parsley, Homemade Seafood Seasoning, and pepper to taste.
