In a large mixing bowl, stir together butter, garlic, parsley, chives, lemon juice, dijon mustard, smoked paprika, salt, pepper, and crushed red pepper. Set aside.
Steak Bites
Heat olive oil in a large skillet over medium-high heat. Add steak pieces and cook until browned. Once cooked, transfer to a plate and set aside.
Add half the cowboy butter to the skillet and cook until the garlic is fragrant. Add the steak bites back into the skillet and toss them in the butter. Let cook for 1-2 minutes. Move the steak bites to a serving plate.
Melt the remaining cowboy butter in the microwave for about 30 seconds and serve on the side of the steak bites. Serve and enjoy!
