Sweet Potato Taco Bowl

Ingredients

  • 1 large Sweet potato peeled and cut into ½ inch cubes
  • ½ lb Ground beef
  • 1 tbsp Member's Mark™ Extra Virgin Olive Oil
  • 1 tbsp Member’s Mark™ Taco Seasoning
  • 1 tsp Member's Mark™ Spanish Style Paprika
  • Member's Mark™ Mediterranean Sea Salt Grinder to taste
  • Member's Mark™ Black Pepper Grinder to taste

Instructions

  • Preheat over to 400' F. Add peeled and cubed sweet potato cubes to a bowl and toss with Member's Mark™ Extra Virgin Olive Oil, Member's Mark™ Spanish Style Paprika, Member's Mark™ Mediterranean Sea Salt, and Member's Mark™ Black Pepper. Make sure each cube is evenly coated.
  • Put seasoned sweet potatoes on a baking sheet and bake them for about 20-25 minutes, until tender.
  • While the sweet potatoes bake, heat a large skillet over medium-high heat and cook ground beef until browned. Drain excess grease.
  • Add Member’s Mark™ Taco Seasoning to the browned ground beef and stir. Cook for an additional minute.
  • Assemble the bowls by adding in roasted sweet potatoes, ground beef, and any desired toppings (avocado, sour cream, lime, etc.).
