Tomato Basil Bruschetta with Whipped Ricotta and Mighty Salt™

Ingredients

  • 1 cup Colorful Grape Tomatoes quartered
  • 1 tbsp Fresh Basil chopped
  • 2 cloves Fresh Garlic chopped
  • 2 tbsp Member's Mark™ Organic Extra Virgin Olive Oil
  • ¼ tsp Member's Mark™ Black Pepper Grinder
  • Mighty Salt™ to taste
  • 12 pieces Crostini toasted
  • ½ cup Whipped Ricotta Cheese

Instructions

Crostini

  • Preheat the oven to 400°F and line two baking sheets with parchment paper.
  • Arrange thinly sliced baguette slices in a single layer on the baking sheets and add olive oil to both sides.
  • Bake for 10 to 12 minutes.
  • Sprinkle with Mighty Salt™ and serve with desired toppings.

Whipped Ricotta

  • Combine the ricotta cheese, a dash of olive oil, and salt and pepper.
  • Whip by hand, or with a food processor or stand mixer.

Tomato Basil Bruschetta with Whipped Ricotta and Mighty Salt™

  • In medium bowl mix together tomatoes, basil, olive oil, garlic, and seasonings.
  • Place toasted crostini on a platter.
  • Place a dollop of whipped ricotta on each crostini. Add a spoonful of tomato mixture on top of the ricotta. Finish with a sprinkle ofMighty Salt™ and serve.
