What is Scampi?
Scampi refers to a dish made with seafood cooked in a garlic, butter, and often white wine sauce. In the U.S., the term usually means shrimp scampi—shrimp sautéed in a buttery garlic sauce and often finished with lemon and parsley.
What “Scampi” Originally Meant
Traditionally in Italy, scampi are actually a type of small lobster-like shellfish called langoustines. They were cooked simply with olive oil, garlic, and herbs.
When Italian immigrants came to the U.S., langoustines weren’t widely available, so they started making the dish with shrimp. The name “shrimp scampi” stuck.

Simple Skillet Shrimp (Step-by-Step)
1. Prep the Shrimp
-
Use raw shrimp, peeled and deveined.
-
Pat them dry with paper towels so they sear instead of steam.
-
Season lightly with salt and pepper.
2. Heat the Skillet
-
Heat a skillet (stainless steel or cast iron works great) over medium-high heat.
-
Add 1–2 tablespoons olive oil or butter.
3. Add the Shrimp
-
Place shrimp in the skillet in one single layer.
-
Don’t overcrowd the pan.
4. Cook the First Side
-
Cook 1–2 minutes without moving them.
-
The bottom will turn pink and slightly golden.
5. Flip and Finish
-
Flip shrimp and cook another 1–2 minutes.
-
Add garlic, lemon juice, or seasoning during the last 30 seconds.
6. Remove Immediately
-
Take shrimp off the heat as soon as they are:
