Summertime peaches are the BEST! This is the time to buy up as many as you can find...but what do you do with all of them? This Skillet Peach Cobbler is an excellent way to use up some of your peach bounty...and it also makes the perfect 4th of July dessert!
Preheat oven to 375°F. In a large bowl, combine peaches, Member's Mark™ Ground Cinnamon, and ¼ cup of the sugar in a medium bowl; let stand at room temperature until ready to use.
Place butter in a 10-inch cast-iron skillet; place in preheated oven until butter is melted, about 10 minutes. Meanwhile, in a large bowl, whisk together flour, baking powder, salt, and remaining ¾ cup granulated sugar. Whisk in milk and vanilla until combined.
Carefully remove skillet from oven, and pour in cake batter (there is no need to stir).
Bake in preheated oven 5 minutes. Spoon peaches and any accumulated juices over cake batter, (no need to stir).
Continue baking until golden brown, 25 to 30 minutes.
Serve warm with ice cream.
