Why Use a Cast Iron Skillet?
Using a cast iron skillet to bake a cobbler has several key advantages that make it a favorite among home bakers and chefs alike:
1. Even Heat Distribution
Cast iron heats slowly but retains and distributes heat very evenly, which means:
-
The fruit filling bubbles consistently.
-
The topping bakes evenly, with no burnt edges or raw centers.
2. Crisp, Golden Crust
The hot skillet helps create a crisp, caramelized bottom and edges on the cobbler topping — something harder to achieve in glass or ceramic dishes.
3. Rustic Presentation
A cobbler baked in cast iron has a beautiful, rustic look. You can serve it straight from the skillet, keeping it warm longer and cutting down on dishes.
4. Versatility and Oven-to-Table Convenience
Cast iron goes from stovetop to oven easily. You can warm or pre-cook the fruit filling on the stove, then top and bake it—all in one pan.
5. Retains Heat for Serving
Cast iron holds heat well, keeping your cobbler warm for longer at the table—great for serving with ice cream.
How to Select the Perfect Peach
1. Look for Vibrant Color
-
A ripe peach should have deep golden-yellow skin.
-
Red blush is okay but not a ripeness indicator—it depends on the variety.
-
Avoid green undertones; that usually means it was picked too early.
2. Gently Press for Softness
-
Ripe peaches yield slightly to gentle pressure near the stem end.
-
If it’s rock hard, it’s not ready. If it’s too mushy, it may be overripe or bruised.
3. Smell for Fragrance
-
A ripe peach will have a sweet, floral scent, especially near the stem.
-
No smell = probably underripe.
4. Check the Skin Texture
-
Slight fuzz is normal, but wrinkled skin around the stem can be a good sign—it often means it’s extra ripe and sweet.
-
Avoid peaches with cuts, bruises, or dark soft spots.
Bonus Tip:
If you can’t find perfectly ripe ones, choose firm peaches and let them ripen at room temp in a paper bag for a couple of days.
