Tips for Oven-Roasting Chicken Thighs

Oven-roasted chicken thighs are one of the easiest ways to get juicy meat with crispy skin. These tips will help you get consistently great results.


1. Start with Dry Chicken

Moisture prevents crisping.

  • Pat the thighs very dry with paper towels.

  • If you have time, leave them uncovered in the fridge for 1–24 hours (dry brining). This dries the skin and makes it extra crispy.


2. Use High Heat

Chicken thighs roast best at a hotter temperature.

Best range:

  • 400–425°F

This allows the fat in the skin to render and crisp while the meat stays tender.


3. Arrange Skin-Side Up

  • Place thighs skin-side up on a sheet pan or rack.

  • Leave space between pieces so they roast instead of steam.

Even better:
Use a wire rack over a sheet pan so hot air circulates underneath.


4. Roast Until 165–185°F

Chicken thighs are better slightly higher than breast meat.

Typical timing:

  • Bone-in thighs: 35–45 minutes

  • Boneless thighs: 25–30 minutes

Internal temp:

  • Safe at 165°F, but thighs taste best around 175–185°F because the connective tissue melts.


5. Finish with the Broiler (Optional but Great)

If the skin needs more crisping:

  1. Turn on the broiler for 2–3 minutes.

  2. Watch closely so it doesn’t burn.


6. Let Them Rest

Rest 5 minutes after roasting so juices redistribute.
