Tips for Making Shrimp Skewers
- Choose large or jumbo shrimp. They’re easier to skewer and less likely to overcook. Look for 16–20 or 21–25 count per pound.
- Keep the shrimp similar in size. This helps everything cook at the same rate.
- Pat shrimp very dry. Excess moisture can prevent good browning on the grill.
- Use two skewers for larger shrimp. Threading two parallel skewers through the shrimp keeps them from spinning when you flip them.
- Soak wooden skewers for at least 30 minutes before grilling.
- Don’t marinate too long. About 15–30 minutes is plenty, especially if the marinade contains lemon or lime juice.
- Season generously. Shrimp have a mild flavor, so garlic, paprika, Cajun seasoning, lemon, herbs, or chili flakes work particularly well.
- Get the grill hot first. Medium-high to high heat gives you those nice browned edges without requiring a long cooking time.
- Oil the grill grates. This helps prevent the shrimp from sticking.
- Don’t crowd the shrimp. Leave a little space between each one so heat can circulate and the shrimp can brown.
- Watch them closely. Shrimp cook incredibly quickly—usually 2–3 minutes per side depending on size and grill temperature.
- Look for the “C” shape. Perfectly cooked shrimp are opaque and pink with a gentle C shape. If they curl tightly into an “O,” they’re probably overcooked.
- Pull them immediately. Shrimp continue cooking from residual heat, so take them off as soon as they’re done.
- Finish with something fresh. A squeeze of lemon, chopped parsley, cilantro, or a drizzle of garlic butter makes a big difference.
