These Savory Egg Bites are a protein-packed, flavorful snack or breakfast option that combine creamy Member’s Mark™ 4% Cottage Cheese, Mighty Salt™, and freshly ground Member’s Mark™ Black Pepper for a rich, savory flavor. Perfect for meal prep or on-the-go breakfast- plus they’re easy to make and customizable to your taste.
To begin, preheat your oven to 350°F and lightly grease a muffin tin with Member’s Mark™ Organic Extra Virgin Olive Oil or use silicone liners for easy release. In a blender, combine 6 large eggs, 1 cup of Member’s Mark™ 4% Cottage Cheese, and 1/2 tsp of Mighty Salt™. Blend until smooth—this gives the bites their signature fluffy texture and creamy consistency. You can also complete this step in a bowl with an immersion blender.
You can keep the egg mixture simple or customize with your favorite mix-ins like chopped spinach, red bell pepper, sautéed onions, cooked bacon, or shredded cheese. Fill the muffin pan cups with your mix-ins, then pour the egg mixture evenly into the muffin cups, filling each about 3/4 full. Top with a grind of Member’s Mark Black Pepper Grinder for extra kick, then bake for 20 minutes, or until the centers are set and the tops are lightly golden.
Once baked, let them cool for 5 minutes before removing. These egg bites are excellent warm, but also store well in the fridge in an airtight container for up to 5 days or can be frozen for longer storage (up to 2 months). If placing in the freezer, make sure the bites are in a zip-lock bag or airtight container. Just reheat in the microwave for a quick breakfast or snack. Savory Egg Bites

Ingredients
- Member's Mark™ Organic Extra Virgin Olive Oil for muffin pan
- 6 Eggs large
- 1 cup Member's Mark™ 4% Cottage Cheese
- ½ tsp Mighty Salt™
- ½ cup Red Bell Pepper diced
- 3 cups Baby Spinach cut/ torn
- Member's Mark™ Black Pepper Grinder to taste
Instructions
- Preheat the oven to 350°F and grease a nonstick muffin pan with olive oil.
- In a blender, place the eggs, Member's Mark™ 4% Cottage Cheese, Mighty Salt™, and a few grinds of Member's Mark™ Black Pepper Grinder to taste. Blend until smooth. You can also put these ingredients in a bowl and use an immersion blender to blend.
- Roughly chop or tear the baby spinach. Evenly divide the spinach and diced red peppers among the cups of the muffin pan. Pour the egg mixture evenly over the spinach and red peppers in the cups of the muffin pan.
- Bake for 20 minutes or until the eggs are set. Let cool for 5 minutes before removing from the muffin pan.
