Pumpkin Spice Cut Out Cookies and Cozy Apple Tea

How to Make Homemade Icing

This recipe leaves the decorating up to you – you can purchase a tub of icing from the store, or skip the icing altogether and use sprinkles!  If you’re wanting to make your own icing, though, here’s a recipe to try:

Classic Cookie Icing (Quick & Shiny)

Dries firm, smooth, and glossy. Great for decorating.
Ingredients:

  • 1 cup powdered sugar

  • 2–3 tbsp milk (or water)

  • 1 tsp light corn syrup (optional, makes it shiny)

  • ½ tsp vanilla or almond extract

Instructions:

  1. Whisk sugar, milk, and syrup until smooth.

  2. Adjust consistency: add more sugar to thicken, more milk to thin.

  3. Dip cookies or use a piping bag. Dries within a few hours.

Royal Icing (Decorating Standard)

Perfect if you want detailed piping that hardens completely.
Ingredients:

  • 3 cups powdered sugar

  • 2 egg whites (or 4 tsp meringue powder + 6 tbsp water)

  • ½ tsp vanilla extract

Instructions:

  1. Beat egg whites until frothy. Add sugar gradually and whip until glossy and stiff peaks form.

  2. Thin with water a few drops at a time for outlining or flooding.

Simple Butter Icing (Soft & Creamy)

Tasty, but doesn’t harden fully — more for flavor than decorating.
Ingredients:

  • ½ cup butter, softened

  • 2 cups powdered sugar

  • 1–2 tbsp milk or cream

  • 1 tsp vanilla

Instructions:

  1. Beat butter until creamy.

  2. Mix in sugar gradually, then milk and vanilla until smooth.

  3. Spread on cooled cookies

For the Pumpkin Spice Cut Out Cookies

  • 2 cups Unsalted butter room temperature
  • 1 cup Granulated sugar 
  • 1 cup Brown sugar lightly packed
  • ¼ cup Pumpkin purée or pumpkin pie filling
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 5 cups All-purpose flour
  • tsp Member's Mark™ Pumpkin Spice Seasoning
  • 1 tsp Salt

For the Pumpkin Spice Cut Out Cookies

  • In the bowl of an electric mixer, use the paddle attachment to cream the butter, white sugar, and brown sugar on low to medium speed.
  • Mix for about 1 minute until thoroughly incorporated. Scrape down the sides of the bowl with a plastic spatula and mix again for a few seconds more. Add pumpkin purée and eggs while slowly mixing. Add vanilla extract and mix until combined. Scrape down the bowl with your spatula at least once and mix briefly again.
  • In a large bowl, sift the four, Member's Mark™ Pumpkin Spice Seasoning, and salt.
  • Slowly add the flour mixture to the electric mixer bowl will the mixer is running on low (approximately 30 seconds). When the dough clumps around the paddle attachment, it’s ready (be sure not to over-mix).
  • Roll the dough out between 2 large pieces of parchment paper. Place on a baking sheet and into the fridge for a minimum of 1 hour.
  • Roll out the dough further if you need to, and cut out cookie shapes. Place on parchment paper-lined baking sheet.
  • Put cookie dough shapes back into the fridge for 10 minutes to 1 hour to chill again. They will then hold their shape better when baked.
  • Preheat your oven to 350°F. Bake cookies for 8-12 minutes or until the edges become golden brown. Baking times will vary depending on the thickness and shapes of your cookies.
  • Let cookies cool to room temperature, and then decorate with icing and/or sprinkles.

For the Cozy Apple Tea

  • Add all of the ingredients into a large pot. Turn the stove to medium-low heat. Place the lid over the pot partially covered. Cook for one hour. 
  • Place a super-fine strainer or mesh cloth over another pot and directly strain to discard the apples and spices. 
  • Place desired amount of tea in a teacup and serve with a thin-sliced orange and cinnamon stick.
