Corn salad just about the easiest, summeriest (is that a word?) side that you can make this time of year! As you can tell from the title, this version features Weber® Kick ‘N Chicken™ Seasoning for a subtle kick, plus creamy avocado to cool it down. This salad is perfect to bring to barbecues, picnics, 4th of July gatherings, Father’s Day celebrations…you name it!
We mentioned above that this salad is easy. We are not fibbing about that! Basically, it involves a little chopping, a little stirring, and throwing it all together in a nice bowl (it’s all about the presentation)! The only work involved is grilling the corn, and we do recommend grilling it rather than boiling – it tastes so much better that way!

Prepare the Corn:
- Pull back the husks without removing them completely and remove the silk (the fine, thread-like strands).
- Rinse the corn under cold water.
- Soak the corn in water for 15-30 minutes. This helps prevent the husks from burning too quickly.
Preheat the Grill:
- Preheat your grill to medium-high heat (about 375-450°F).
Grill the Corn:
- Pull the husks back over the corn.
- Place the corn on the grill and close the lid.
- Grill for about 15-20 minutes, turning every 5 minutes. The husks will char, but the corn inside will steam and cook.
Finish and Serve:
- Carefully remove the corn from the grill using tongs.
- Let it cool slightly, then peel back the husks.
- Brush with butter or olive oil and season with a little salt and pepper…OR you can sprinkle it with Weber® Kick ‘N Chicken Seasoning for even more flavor!
The great thing about this salad is that it’s completely customizable. Not a fan of red onions? Try scallions! Avocados not ripe yet? Consider adding your favorite bean! Even though we’re focusing on Weber® Kick ‘N Chicken™ Seasoning in this recipe, it’s perfectly acceptable to substitute that with any of your favorite Weber® seasonings as well (try Weber® Gourmet Burger – you will be pleasantly surprised)!
Weber® Kick 'N Chicken™ Corn and Avocado Salad
Ingredients
- 4 ears Corn, grilled (see above for tips on how to grill corn)
- 5 Avocados, diced into small pices
- 1 small Red onion, diced
- 12 Cherry tomatoes, sliced in half
- ¼ cup Member's Mark™ Extra Virgin Olive Oil
- 1 tbsp Weber® Kick 'N Chicken™ Seasoning
- Lime wedges, for garnish (you can also squeeze a little lime juice onto the salad if desired)
Instructions
- To begin, place grilled corn on a cutting board to cool. Once cooled, stand the corn up in a large mixing bowl with the cut side down. Slice the kernels off with a sharp knife from top to bottom, getting as close to the cob as you can. Repeat on all sides of the corn.
- Add the diced avocado, diced red onion, and sliced tomatoes to the bowl with the corn.
- Next, add the Member's Mark™ Extra Virgin Olive Oil and Weber® Kick 'N Chicken™ Seasoning to the bowl. Stir gently, being sure not to smash the avocado.
- Move to a serving bowl, garnish with lime wedges (and a squeeze of lime juice if desired), and serve!
