How to Make Corned Beef at Home
Corned beef is beef brisket that’s been cured in a seasoned salt brine, then slowly cooked until tender. The word “corned” refers to the large grains (“corns”) of salt traditionally used in the curing process. Note – this recipe takes a few days, yes DAYS to meet corned beef perfection. No sweat – just be prepared!
Ingredients

1 gallon water
-
1 cup kosher salt
-
½ cup brown sugar
-
2 tbsp pink curing salt
-
3 tbsp pickling spice
-
4 cloves garlic, smashed
-
2 bay leaves
-
3–5 lb beef brisket (flat cut is best for slicing)
Step 1: Make the Brine

In a large pot combine water, salt, sugar, curing salt, and pickling spice.

Bring to a simmer and stir until salt dissolves.

Add garlic and bay leaves.

Cool the brine completely in the refrigerator.
Step 2: Cure the Brisket

Place brisket in a large container or zip bag.
-
Pour the cold brine over the meat until fully submerged.
-
Refrigerate 5–7 days, turning the brisket once per day.
(This is what gives corned beef its signature flavor.)
Step 3: Cook the Corned Beef

Remove brisket from the brine and rinse.

Place in a large pot and cover with fresh water.

Add:

1 tbsp pickling spice
-
1 onion (quartered)
-
2 carrots
-
2 celery stalks
-
-
Simmer 2½–3½ hours, until fork-tender.

Corned Beef Sliders
Ingredients
For the Sandwich
- 12 Sweet Hawaiian rolls
- 32 oz Sauerkraut drained
- ¼ cup Reuben dressing see instructions below
- ¼ cup Butter divided
- 12 slices Swiss cheese
- 1 lb Corned beef sliced thin
- 3 tsp Einstein Bros™ Everything Bagel Seasoning divided
For the Reuben Dressing
- ½ cup Mayonnaise
- 2 tbsp Ketchup
- 2 tbsp Sweet pickle relish (or finely chopped pickles)
- 1 tsp Prepared horseradish
- 1 tsp Worcestershire sauce
- 1 tsp White vinegar
- ½ tsp Member's Mark™ Fine Garlic Powder
- ½ tsp Member's Mark™ Fine Onion Powder
- Member's Mark™ Black Peppercorn Grinder to taste
- Member's Mark™ Himalayan Pink Salt to taste
Instructions
- Preheat oven to 375ºF.
- Remove the rolls from the packaging. While leaving the rolls together in one sheet, slice in half. Place the bottom half of the rolls into a greased 9" x 13" baking dish.
- In a small bowl, combine sauerkraut and reuben dressing (see instructions below).
- Spread 3 tablespoons of butter over bottom layer of rolls. Place 6 slices of cheese on top of butter. Spread sliced corned beef evenly over top of cheese.
- Spread reuben dressing/sauerkraut mixture over top of corned beef. Add remaining 6 slices of cheese over sauerkraut mixture. Sprinkle 1½ tsp Einstein Bros™ Everything Bagel Seasoning evenly over the cheese. Place the sheet of roll tops on top of cheese.
- Melt remaining butter and brush it over top of sliders. Sprinkle remaining 1½ tsp Einstein Bros™ Everything Bagel Seasoning on top of rolls. Bake for 12-15 minutes, or until cheese is melted and tops of rolls are a bit crunchy.
- Slice in between rolls with serrated edge knife before serving.
For the Reuben Dressing
- In a small bowl, whisk all of the ingredients. Add salt and pepper to taste. Refrigerate for 30 minutes before using.
