Weber® Roasted Garlic & Herb Chicken Thighs with Weber® Steak ‘n Chop™ Grilled Mushrooms

Sometimes the best recipes are the simplest.  (Actually, most times that is true!). When you’re looking for a no-fuss, no-disaster-in-your-kitchen, fast, and delicious meal, look no further than grilled chicken thighs and mushroom skewers!  This is the perfect summertime meal that requires only a few ingredients.  For this recipe, we use Weber® Roasted Garlic & Herb Seasoning on the chicken, and Weber® Steak ‘n Chop™ Seasoning on the mushrooms (or, you can mix and match)!

If you’re wanting to switch up the chicken thighs and add some drumsticks to the mix, here’s how to do it!

Ingredients:

  • Chicken drumsticks
  • Olive oil (or other cooking oil)
  • Weber® Roasted Garlic & Herb Seasoning OR

Instructions:

  1. Prepare the Drumsticks:
    • Pat the drumsticks dry with paper towels. Removing excess moisture helps them crisp up nicely on the grill.
    • Rub the drumsticks with olive oil, which helps the skin crisp up and prevents sticking.
    • Season the drumsticks with the desired amount of Weber® Roasted Garlic & Herb Seasoning. If you’re using a marinade, you can marinate them for at least 30 minutes or up to 24 hours in the refrigerator.
  2. Preheat the Grill:
    • Preheat the grill to medium heat (about 350°F to 375°F). Once it’s hot, reduce to medium-low heat before adding the drumsticks.
  3. Grill the Drumsticks:
    • Place the drumsticks over the cooler side of the grill (indirect heat). Close the lid and cook them for about 30-40 minutes, turning occasionally. This allows the drumsticks to cook through without burning.
  4. Check for Doneness:
    • The drumsticks are done when they reach an internal temperature of 165°F. You can use a meat thermometer to check this.
    • If you don’t have a thermometer, check that the juices run clear and the meat near the bone is no longer pink.
  5. Rest the Drumsticks:
    • Once cooked, let the drumsticks rest for about 5 minutes before serving. This helps the juices redistribute throughout the meat.
  6. Serve and Enjoy:
    • Serve the drumsticks hot with your favorite sides like coleslaw, potato salad, or grilled vegetables.

Weber® Roasted Garlic & Herb Chicken Thighs with Weber® Steak 'n Chop™ Grilled Mushrooms

Sometimes simple is the best way to go. By simply seasoning chicken thighs with Weber® Roasted Garlic & Herb Seasoning and mushrooms with Weber® Steak 'n Chop™ Seasoning, you will have a meal filled with flavor! (Or mix and match the seasonings!). No need for crazy marinades, 11 bottles of seasonings, or complicated recipes. Just fresh and tasty food - no fuss!

Ingredients
  

For the Grilled Chicken Thighs

  • 2 tbsp Member's Mark™ 100% Pure Olive Oil
  • 2 tbsp Weber® Roasted Garlic & Herb Seasoning, plus more if desired
  • 2 lbs Boneless, skinless chicken thighs

For the Grilled Mushrooms

  • 1 lb Button mushrooms, cleaned and trimmed
  • 2 tsp Member's Mark™ 100% Pure Olive Oil
  • 3 tsp Weber® Steak 'n Chop™ Seasoning, divided (or more if desired)
  • 2 tbsp Butter, melted

Instructions
 

For the Grilled Chicken Thighs

  • In a small bowl, whisk together the Member's Mark™ 100% Pure Olive Oil and Weber® Roasted Garlic & Herb Seasoning.
  • Add the chicken thighs to a zip top bag, and then add the olive oil mixture. Make sure the chicken is coated in the olive oil, and then place the chicken in the refrigerator to marinate for at least 30 minutes or up to overnight.
  • Preheat the grill over medium-hight heat, and rub the grill grates with additional olive oil so the chicken does not stick to the grates.
  • Add the chicken onto the grill and reduce the temperature to medium. You can sprinkle additional Weber® Roasted Garlic & Herb Seasoning onto the chicken if desired. Grill the chicken for 7-10 minutes per side until the chicken reaches an internal temperature for 165℉.
  • Let the chicken rest for 5 minutes before serving.

For the Grilled Mushrooms

  • Preheat grill to medium-high heat.
  • Thread the mushrooms onto skewers. Brush with Member's Mark™ 100% Pure Olive Oil and sprinkle with 2 tsp Weber® Steak 'n Chop™ Seasoning.
  • Place the skewers on the grill. Cook for 4-5 minutes per side, or until mushrooms are tender and browned.
  • Brush the mushrooms with the melted butter, and then sprinkle with 1 tsp Weber® Steak 'n Chop™ Seasoning (or more if desired).
