Dash™ Salmon and Zucchini

Now that the new year is here, a lot of people have healthy eating on the brain.  We can assure you that healthy eating doesn’t have to mean flavorless! A quick, healthy meal is easy to achieve with Dash™ Seasonings. This salmon is seasoned to perfection with Dash™ Garlic & Herb Seasoning and then oven-baked for delicious texture. While the salmon is baking, sauté sliced zucchini and onions (seasoned in Dash™ Original) for a scrumptious side dish!

To ensure you cook your salmon to perfection, here are some helpful tips:

1. Choose Fresh, High-Quality Salmon

  • Look for bright, moist flesh and avoid fish that smells overly “fishy.”
  • Wild-caught salmon typically has a richer flavor, while farmed salmon is milder.

2. Prep the Salmon

  • Pat the salmon dry with paper towels to help seasonings stick and promote even cooking.
  • Remove any pin bones with tweezers.

3. Season or Marinate

  • Simple seasoning: Dash Original or Garlic & Herb are both excellent, salt-free choices!

4. Preheat the Oven

  • Set the oven to 450°F for this recipe.

5. Use Parchment Paper or Foil

  • Baking salmon in parchment paper or foil helps lock in moisture.
  • Add herbs, citrus slices, or vegetables to the packet for extra flavor.

6. Avoid Overcooking

  • Salmon continues to cook after being removed from the oven. Aim to take it out just before it’s fully cooked.

Not a fan of zucchini? Here are some other veggie options – all taste great with Dash Seasonings!

  • Quick-Cooking Vegetables: Bell peppers, zucchini, mushrooms, snap peas, spinach.
  • Longer-Cooking Vegetables: Carrots, broccoli, cauliflower, green beans (consider pre-steaming or parboiling).

Ingredients
  

For the Salmon

  • 2 Salmon filets, 6 oz each
  • 2 tbsp Butter
  • tsp Dash™ Garlic & Herb Seasoning

For the Zucchini

  • 2 tbsp Member's Mark™ Extra Virgin Olive Oil
  • 1 small Red onion, sliced
  • 1 medium Green zucchini, sliced
  • 1 medium Yellow zucchini, sliced
  • 2 tsp Dash™ Original Seasoning

Instructions
 

For the Salmon

  • Preheat oven to 450℉.
  • Line a baking sheet with aluminum foil and spray with cooking spray.
  • Place salmon filets on baking sheet. Evenly top salmon with pads of butter. Season salmon with Dash™ Garlic & Herb Seasoning.
  • Bake for 12-16 minutes, or until internal temperature in thickest part of salmon registers 145℉.

For the Zucchini

  • In a skillet over medium heat, heat the Member's Mark™ Extra Virgin Olive Oil until shimmering. Add the onion, zucchini, and Dash™ Original Seasoning. Sauté until onion is golden brown.
