Corn and Potato Chowder
Ingredients
- 4 slices Thick cut bacon, diced
- 2 stalks Celery, sliced
- 2 lbs Red potatoes, cut into 1⁄2-inch pieces (6 c)
- 4 cups Water
- 2 Member’s Mark™ Chicken Bouillon Cubes
- 1 Member’s Mark™ Bay Leaf
- 1 tsp Member’s Mark™ Thyme
- 1 tsp Member’s Mark™ Spanish Style Paprika
- ½ tsp Member’s Mark™ Fine Garlic Powder
- ½ tsp Member’s Mark™ Onion Powder
- ¼ tsp Member’s Mark™ Fine Ground Black Pepper
- 1 (12 oz) package Frozen corn, thawed
- 1½ cups Half and half
- 1 tbsp Member’s Mark™ Chopped Chives
Instructions
- Cook bacon in 5-quart stock pot until crisp. Remove bacon, leaving drippings in pot.
- Add celery and cook 4 minutes or until softened. Add potatoes and cook 2 minutes.
- Stir in water, Member's Mark™ Chicken Bouillon Cubes, Member's Mark™ Bay Leaf, Member's Mark™ Thyme, Member's Mark™ Paprika, Member's Mark™ Garlic Powder, Member's Mark™Onion Powder, and Member's Mark™ Fine Ground Black Pepper.
- Bring to a boil, reduce heat, and simmer 15 minutes or until potatoes are tender.
- Return bacon to pot. Stir in corn, half and half and Member's Mark™ Chives and simmer 5 minutes.
