Holiday Pomegranate Mocktail

Holiday drinks can be festive, even without the alcohol! This Holiday Pomegranate Mocktail features all of the flavor, color, and fun of a cocktail – and it’s great for all ages to enjoy!  Member’s Mark™ Mediterranean Sea Salt Grinder adds a nice contrast to this sweet (but not TOO sweet) drink. 

How to Remove Pomegranate Arils

While this recipe uses pomegranate juice that you can purchase at the store, pomegranates are in season right now, and their arils (aka seeds) are delicious!  You can add a few right into this mocktail for extra texture and flavor.  They can be a little tricky to remove, though, so follow these instructions!

1. Fill a large bowl with cold water

Use a bowl big enough to fit your hands and the fruit comfortably.


2. Cut the pomegranate into quarters

  • Slice off the crown (top).

  • Score the skin into 4–6 sections.

  • Break it apart gently.


3. Submerge a section underwater

Keep the pomegranate piece fully underwater the whole time—this prevents juice from spraying or staining.


4. Gently rub or pull the arils out

Underwater:

  • Use your thumbs to massage the arils out.

  • They will sink to the bottom of the bowl.

  • The white membrane (pith) will float to the top.


5. Skim off the membrane

Use your hand or a slotted spoon to remove the floating white bits.


6. Strain the arils

Pour everything through a fine strainer or colander.
You’ll be left with clean, separated arils.

  • Prepare the glass by running a lime wedge around the rim. Dip the rim into a plate sprinkled with Member's Mark™ Mediterranean Sea Salt. Fill the glass with ice.
  • In a cocktail shaker, combine the pomegranate juice, lime juice, and apple cider vinegar. Shake to combine. Pour the juice mixture over the ice in the prepared glass.
  • Top with ginger beer and gently stir to combine.
  • Garnish with fresh pomegranate arils and a lime wedge.
