Guacamole Deviled Eggs

Deviled eggs are nothing new…unless they’re this scrumptious guacamole version! Avocado + guacamole seasonings add a nice layer of flavor and texture to this classic crowd-pleasing appetizer.  In particular, Member’s Mark™ Dried Cilantro adds a more subdued (but still tasty) flavor than fresh cilantro – plus it has a much longer shelf life!

Dried Cilantro vs. Fresh Cilantro

The flavor of dried cilantro is quite different from fresh:

  • Mild & muted – much less bright than fresh cilantro

  • Slightly earthy – with a faint grassy note

  • Subtly citrusy – but not as zesty or sharp as fresh

  • A little musty/herbal – especially if it’s been stored a while

Compared to fresh cilantro (which is bold, citrusy, and almost peppery), dried cilantro is more subdued and less complex. It tends to blend into dishes rather than stand out.

Best uses:

  • Mixed into soups, stews, or sauces

  • Seasoning blends or rubs

  • Dishes where it can rehydrate (like rice or beans)

Not ideal for:

  • Garnishes

  • Salsas or fresh toppings (where that bright pop matters)

Tips for Making Hard Boiled Eggs

Here are the best tips to get perfect hard-boiled eggs every time—easy to peel, tender whites, and creamy (not chalky) yolks:

Use slightly older eggs

Fresh eggs are harder to peel. Eggs that are about 5–10 days old work best.

Start in cold water

  • Place eggs in a single layer

  • Cover with cold water by about 1 inch

  • Bring to a gentle boil

Turn off heat (don’t over boil)

Once boiling:

  • Turn off heat, cover, and let sit 10–12 minutes

    • 10 minutes = slightly softer center

    • 12 minutes = fully firm

Ice bath immediately

Transfer eggs to ice water for at least 5–10 minutes
This:

  • Stops cooking

  • Prevents the green-gray ring

  • Helps shells come off easier

Peel the easy way

  • Crack and roll gently

  • Start peeling from the wider end (air pocket)

  • Peel under running water if needed

  • Remove egg yolks, reserving egg whites.
  • Lightly mash egg yolks in small bowl. Stir in remaining ingredients.
  • Spoon or pipe mixture into egg whites. Sprinkle with additional Member’s Mark™ Chives. Refrigerate until ready to serve.
