What is Pork Tenderloin?

Pork tenderloin is a long, narrow, boneless cut of pork that comes from the muscle running along the backbone of the pig. It’s one of the most tender and lean cuts you can buy.

Key things to know:

  • Texture: Very tender (almost buttery when cooked right)
  • Flavor: Mild, slightly sweet, takes on marinades and seasonings really well
  • Size: Usually about 1–1.5 pounds and shaped like a thin log
  • Fat content: Leaner than most other pork cuts

Don’t confuse it with:

  • Pork loin – wider, thicker, and less tender (better for roasting longer)

Common ways to cook it:

  • Roasting in the oven
  • Searing + finishing in the oven
  • Grilling
  • Slicing into medallions and pan-searing

Cooking tip:

Because it’s so lean, it can dry out quickly—cook it to about 145°F (slightly pink inside) and let it rest before slicing.

Tips for Cleaning Leeks

Leeks are delicious, but they’re notorious for hiding dirt and grit between their layers. Here’s the easiest way to clean them properly:

Step-by-step: How to clean leeks

1. Trim first

  • Cut off the root end (just the very bottom)
  • Slice off the tough dark green tops (save for stock if you want)

2. Slice them

  • Cut the leek lengthwise (best for larger pieces), or
  • Slice into rounds if your recipe calls for it

Cutting first is key—this exposes all the hidden layers where dirt gets trapped.

3. Soak in cold water

  • Place the cut leeks in a bowl of cold water
  • Swish them around gently with your hands

Dirt will sink to the bottom while the leeks float.

4. Lift, don’t pour

  • Scoop the leeks out with your hands or a slotted spoon
  • Don’t dump the bowl—that just pours the dirt back onto them

5. Repeat if needed

  • If they were especially dirty, give them another rinse in fresh water
