Spooky Eyeball Sangria

The ultimate Halloween cocktail features something so creepy and realistic looking, you are guaranteed to give your guests a scare! This Spooky Sangria features a lychee “eyeball” – don’t worry, it tastes better than it sounds! While this drink features alcohol, you can easily plop some eyeballs in regular punch for kids, too!  Pomegranate juice gives this sangria a refreshingly tart and subtly sweet flavor.

How to Make the Sangria Extra Spooky

Try making the eyeballs with “veins!”

Drain the lychees through a sieve (if using canned). Gently pat dry with a paper towel (for all types of lychee – fresh, canned, or frozen.)

Put raspberry jam into a small bowl and stir well to loosen it. Transfer the jam to a piping bag. Pipe jam into each lychee to almost fill the main cavity. Press a small blueberry into the middle of the jam with the dimpled part facing up to be the pupil of the eye.

Use a fine brush to paint a red food coloring around the lychee to create a “bloodshot” look! Let dry before placing in the sangria.

What is Lychee?

A lychee (pronounced LY-chee or LEE-chee) is a small tropical fruit known for its sweet, juicy flesh and floral flavor.

What does lychee taste like?

  • Flavor: Sweet, floral, and refreshing, with hints of grape, pear, and rose.

  • Texture: Juicy, soft, and slightly firm, similar to a peeled grape.

  • Color: Red or pink, bumpy skin on the outside, with translucent white flesh inside.

  • Seed: One large, dark brown seed in the center, which you don’t eat

    Where can you find lychee?

You can usually find lychee in the produce section or international foods aisle in a grocery store produce section. Look near tropical fruits like mangoes, rambutan, and dragon fruit. Fresh lychee is more common in late spring and summer.  You can also find canned lychee near the canned tropical fruits.

    How do you eat lychee?

    1. Peel off the thin, bumpy outer skin.

    2. Eat the white flesh around the seed.

    3. Discard the skin and seed.
