What is a Frittata?
A frittata is an Italian egg dish similar to an omelet or crustless quiche. It’s typically made by whisking eggs and mixing in a variety of ingredients—like cheese, vegetables, meats, or herbs—before cooking it slowly on the stovetop and often finishing it in the oven. Unlike a traditional omelet, a frittata isn’t folded; it’s cooked flat and then sliced into wedges for serving.

Instructions
For the Frittata
- Preheat oven to 425℉.
- Whisk together eggs, milk, Weber® Garlic Parmesan Seasoning, and Member’s Mark™ Sea Salt and Ground Black Pepper to taste. Set aside.
- Spray a medium oven-safe skillet with cooking spray. Cook the chopped bacon until crispy, then drain on paper towels and set aside.
- In the same skillet, add the olive oil, spinach, and diced tomatoes. Cook until the spinach is wilted, about 3 minutes. Add in the egg mixture and bacon, and stir to combine.
- Let cook, without stirring, for about 2 minutes, just until the edges are set.
- Place the entire skillet in the oven and cook for 15 minutes, or until the eggs are set and slightly golden.
- Top with some additional Weber® Garlic Asiago Seasoning. Slice, serve and enjoy!
For the Crispy Skillet Potatoes
- Quarter potatoes lengthwise, then cut each piece crosswise into 1-inch wide chunks.
- Heat vegetable oil in a 10 to 12-inch cast iron or non-stick skillet over medium heat until shimmering. Add the potatoes, arrange in a single layer cut-side down, and season with 1 teaspoon Weber® Garlic Parmesan Seasoning and ó teaspoon Member’s Mark™ Sea Salt.
- Cover with a tight fitting lid and cook undisturbed until the potatoes are tender and the bottoms are golden brown, about 20 minutes.
- Uncover and flip each piece with tongs to a second cut side. Season with remaining Weber® Garlic Parmesan Seasoning and Member’s Mark™ Sea Salt and Member’s Mark™ Ground Black Pepper to taste.
- Increase the heat to medium high and cook uncovered until the second side is golden brown, 5 to 10 minutes more, moving the pieces around as needed so they brown evenly.
- Taste and season with more Sea Salt and Ground Black Pepper, as needed.
