Before you completely write them off, why not try changing your usual ground beef + soft flour tortilla to flavorful chicken + lettuce wrap? Chicken Taco Lettuce Wraps are a delicious and healthier alternative to traditional tacos. They’re easy to make and full of flavor, and they won’t leave you feeling guilty for keeping up with your Taco Tuesday tradition!
The recipe we’ve outlined below is pretty delicious on its own – chicken, yellow rice, pinto beans, avocado, and tomato. (By the way, we use a boxed yellow rice for this recipe, but there are some great homemade alternatives online that you are certainly welcome to try!) If you are looking to add even more tasty toppings, here are some options that we highly recommend:
- Crumbled Queso Fresco or Cotija Cheese: These Mexican cheeses add a salty, tangy flavor to tacos.
- Sliced Jalapeños: For an extra kick, add some thinly sliced fresh jalapeños.
- Radishes: Thinly sliced radishes add a crisp texture and a peppery flavor.
- Corn: Grilled or roasted corn kernels add sweetness and a nice texture
- Cilantro: Fresh cilantro leaves add a pop of freshness and a hint of citrusy flavor.
- Lime Wedges: Squeezing fresh lime juice over your tacos adds brightness and enhances the flavors.
- Diced Onions: Red onions or white onions add a sharp flavor and crunch. You can also try pickled onions for a tangy twist.

Chicken Taco Lettuce Wraps
Ingredients
- 1 lb Boneless, skinless chicken breast
- 2 cloves Garlic, minced
- 2 tbsp Tone's® Taco Seasoning
- 1 tbsp Olive oil
- 1 box (6.9 oz) Yellow rice, cooked according to package directions
- 8 leaves Romaine lettuce, rinsed
- 1 can (15.5 oz) Pinto beans, drained and rinsed
- 1 Medium avocado, diced
- 1 Medium tomato, diced
Instructions
- In a large bowl, add the chicken, garlic, olive oil, and Tone's® Taco Seasoning. Place in fridge and let marinate for at least 15-30 minutes or up to 24 hours.
- While the chicken is marinating, cook the yellow rice according to the package's directions. Set aside.
- Remove chicken from marinade and discard marinade. Place chicken in a large pan over medium-high heat. Cook chicken until it is no longer pink on the inside, about 9-10 minutes per side (or until it has reached an internal temperature of 165℉).
- To assemble the lettuce wraps, divide the rice evenly between the 8 pieces of lettuce. Next, top with the pinto beans. Add the chicken, avocado, and tomato to each lettuce wrap. Add any of your favorite taco toppings, and enjoy!
