Slow Cooker Shredded Chicken Advantages

Making chicken in the slow cooker is kind of a game changer, and here’s why:

Hands-Off Cooking

Once you toss everything in, the slow cooker handles it. No need to stir, flip, or hover. Just let it do its thing while you live your life.

Tender, Fall-Apart Texture

Slow cooking breaks down the connective tissue in chicken, especially thighs or breasts, making it super juicy and easy to shred or slice.

Consistent Results

It’s really hard to overcook chicken in a slow cooker, especially when there’s enough liquid. That means no more dry, rubbery meat.

Flavor Infusion

The long cook time gives the chicken a chance to absorb whatever seasonings, sauces, or broths you use—way more flavorful than a quick sauté.

Versatility

You can use slow cooker chicken in everything—tacos, rice bowls, sandwiches, soups, salads, pasta… basically whatever’s in your fridge.

Meal Prep Hero

Make a big batch on Sunday and you’ve got protein for the week. It stores and reheats really well, and you can even freeze it.

Try Making Street Corn on the Grill, Too!

The recipe below mentions making the street corn in the oven, but you can also make it on the grill – which if you have time, we definitely recommend!

Instructions

  1. Preheat your grill to medium-high heat.

  2. Grill the corn, turning every few minutes, until it’s charred and golden all around (about 10–12 minutes).

  3. Mix the sauce: In a bowl, combine the sauce ingredients (mentioned below).

  4. Slather the corn with the creamy sauce while it’s still hot.

  5. Sprinkle generously with cotija cheese and chili powder.

  6. Finish with lime juice and chopped cilantro if you’re feeling fancy.

Pro Tip:

Leave the husks on but pulled back for grilling—they make a great little handle and look super authentic!

Tone's® Chicken Tacos and Street Corn

Celebrate Cinco de Mayo with a feast! Tone's® Taco Seasoning adds the distinct taste of chili peppers, Mexican oregano, onion, garlic salt, and a hint of cayenne, without overpowering your festive favorites.

Ingredients

For the Mexican Street Corn

  • 6 ears Fresh sweet corn in the husks
  • 2 tsp Tone's® Taco Seasoning plus more for topping
  • 6 tbsp Mayonnaise
  • 1 cup Cotija cheese crumbled
  • cup Cilantro roughly chopped
  • 2 Limes quartered

For the Chicken Tacos

  • 3 lbs Boneless, skinless chicken breast
  • 4 tbsp Tone's® Taco Seasoning divided
  • ¾ cup Low sodium chicken broth
  • 1 cup Sour cream
  • 3 tbsp Taco sauce
  • Tortillas
  • Romaine lettuce

Instructions

For the Mexican Street Corn

  • Preheat oven to 350℉. Place corn in husks directly on the oven rack. Bake for 35-40 minutes or until fork tender.
  • While the corn is cooking, in a small bowl combine Tone's® Taco Seasoning and mayonnaise.
  • When corn is done, carefully remove from the husk and brush with mayo mixture. Roll in cotija cheese.
  • Sprinkle with additional Tone's® Taco Seasoning and cilantro. Top corn with a squeeze of fresh lime juice.

For the Chicken Tacos

  • Place chicken breasts, 3 tbsp Tone's® Taco Seasoning, and chicken broth in slow cooker.
  • Cover and cook on high for 2-3 hours or low for 4-6 hours, or until chicken is cooked through and shreds easily with a fork. You can use an instant read thermometer to check that the internal temperature of the chicken has reached at least 165° F.
  • Remove the chicken from the slow cooker, leaving the broth in the pot. Let the chicken cool slightly and then shred the chicken by using either two forks, your hands, or a stand mixer fitted with the paddle attachment. Stir in about ½ cup of the broth from the pot for flavor and moisture.
  • Add 1 tbsp Tone's® Taco Seasoning, sour cream, and taco sauce to the shredded chicken; stir.
  • To assemble the tacos, place a piece of romaine lettuce on a tortilla. Top with desired amount of the shredded chicken and toppings of your choice. (We like chopped red onion, diced avocado, cherry tomatoes, and a sprinkle of cheese!)
