Tips for Grilling Pork Chops

Grilling pork chops can turn out juicy and flavorful if you handle them right. Here are some essential tips:

1. Choose the Right Cut

  • Bone-in chops (1–1.5 inches thick) stay juicier and are more forgiving.

  • Thicker chops are better for grilling than thin ones, which can dry out easily.

2. Brine or Marinate First

  • Brine: Soak in a saltwater solution (¼ cup salt to 4 cups water) for 30 minutes to 2 hours.

  • Marinate: Acidic marinades (with lemon, vinegar, or yogurt) add flavor and tenderness.

  • This helps prevent dryness on the grill.

3. Bring to Room Temperature

  • Take the pork chops out of the fridge 30–45 minutes before grilling.

  • This ensures even cooking.

4. Season Well

  • Use any rubs you like (we think you’d like Member’s Mark™ Six Pepper Seasoning on your pork chops, too)!

  • Dry the surface well before seasoning to get a good sear.

5. Preheat the Grill

  • Get the grill hot (medium-high heat, around 400–450°F).

  • Clean and oil the grates right before putting the chops on.

6. Use Two-Zone Heat

  • Sear over direct heat to get a good crust (about 2–3 minutes per side).

  • Then move to indirect heat to finish cooking gently.

7. Don’t Overcook

  • Pork is safe to eat at 145°F internal temperature.

  • Use an instant-read thermometer to check.

  • Rest for 5 minutes after cooking — juices will redistribute.

8. Optional Glaze

  • Brush with a sweet glaze (like BBQ sauce or honey mustard) in the last few minutes, not earlier, to prevent burning.
