Smoked Brisket Mac ‘n Cheese Sandwich

We will admit – this sandwich is a bit of a sloppy mess.  But usually a big, sloppy sandwich usually means that it’s really, REALLY delicious!  This Smoked Brisket Mac ‘n Cheese Sandwich meets the mark.  This recipe offers a tasty combination of creamy macaroni and cheese with savory brisket, all sandwiched between two buttery, toasted buns. Feel free to customize the sandwich with your favorite toppings and enjoy this comforting and indulgent meal!

You might notice this recipe begins with a smoked brisket that’s already been prepared – you can either pick up a pre-made one from your grocery store, or make one at home!

Also, we use two types of cheese for the mac ‘n cheese portion of the sandwich – Monterey Jack and gruyere.  Here are some other great options to try.  Feel free to mix and match as needed!

  • Cheddar: Sharp cheddar is a classic choice for mac and cheese, providing a bold flavor and creamy texture. You can also use mild or medium cheddar for a milder taste.
  • Fontina: Fontina cheese is creamy and slightly nutty, making it a great addition to mac and cheese. It melts smoothly and adds richness to the dish.
  • Parmesan: Parmesan cheese adds a sharp, salty flavor to mac and cheese. It can be used in combination with other cheeses or as a topping for added flavor and texture.
  • Gouda: Smoked gouda cheese adds a unique smoky flavor to mac and cheese. It melts well and creates a rich, creamy sauce with a hint of smokiness.

Smoked Brisket Mac 'n Cheese Sandwich

Ingredients
  

  • 7 tbsp Unsalted butter, divided
  • ½ lb Elbow shaped pasta
  • 6 tbsp All-purpose flour
  • 3 cups Whole milk
  • 2 tbsp Weber® Roasted Garlic & Herb Seasoning
  • 1.5 cups Monterey Jack cheese, grated
  • 1 cup Gruyere cheese, grated
  • 1.5 lbs Smoked brisket
  • ½ cup Bread crumbs
  • Weber® Sweet & Thick Original BBQ Sauce, as desired
  • 4 Hamburger buns, toasted

Instructions
 

  • Preheat the grill to 350°F.
  • Grease a large cast iron skillet with 1 tablespoon of butter, set aside.
  • Cook the pasta in a large pot of boiling water, about 10 minutes. Drain and set aside.
  • In a large saucepan, melt 6 tablespoons of butter over medium heat. Add the flour, and cook while stirring constantly for 3 minutes.
  • Using a whisk, add the milk in slowly. Cook for an additional 4 minutes, until thickened.
  • Remove the pan from the heat, add in 1 tablespoon of Weber® Roasted Garlic & Herb Seasoning and 2 cups of the cheese, stir well to incorporate.
  • Add the pasta and brisket, and mix together well. Pour into skillet.
  • Mix the remaining cheese, bread crumbs, and 1 tablespoon of Weber® Roasted Garlic & Herb Seasoning in a bowl. Sprinkle evenly over the skillet.
  • Place on grill and cook until golden brown and bubbly, 20-30 minutes.
  • Divide evenly between the 4 toasted buns. Drizzle with Weber® Sweet & Thick Original BBQ Sauce, top with the remaining buns, and serve!
