Air Fryer Zucchini Chips

Have an abundance of summertime zucchini? Make yourself a healthy snack/appetizer in a snap! Simply pop slices of zucchini into the air fryer with a little olive oil and Member’s Mark™ Garlic Pepper, and you’re in business!

How To Ensure Your Zucchini Chips are Crispy

To make sure your air fryer zucchini chips come out crispy instead of soggy, here are the key steps:

1. Slice Evenly

  • Use a mandoline or sharp knife to cut the zucchini into thin, uniform slices (about 1/8 inch or thinner).

  • Uneven slices cook unevenly—thin ones may burn before thicker ones crisp.

2. Remove Excess Moisture

  • Lay slices on paper towels, sprinkle with a little salt, and let them sit for 10–15 minutes.

  • This draws out excess water. Pat them completely dry before cooking.

3. Light Coating

  • Toss slices lightly with olive oil or spray with cooking spray.

  • A thin layer of cornstarch or panko can help crispness if you prefer a coated chip.

4. Don’t Overcrowd the Basket

  • Arrange slices in a single layer with a little space between.

  • If they overlap, they’ll steam instead of crisp. Cook in batches if needed.

5. Temperature & Timing

  • Air fry at 375°F–400°F for 8–12 minutes, flipping halfway.

  • Keep an eye on them in the last few minutes—thin slices can brown quickly.

6. Rest for Extra Crunch

  • After air frying, let the chips cool on a wire rack for a few minutes.

  • This helps them firm up instead of softening from trapped steam.

👉 Pro Tip: If you like them really crunchy, go for zucchini rounds with a breadcrumb coating rather than plain slices—they hold crispness longer.

Instructions

  • Set your air fryer to 375°F (190°C) and allow it to preheat for about 5 minutes.
  • Wash and pat the zucchini dry. Slice the zucchinis into thin, uniform rounds, about ⅛ inch thick.
  • In a large bowl, add the zucchini slices and drizzle with 1-2 tablespoons Member's Mark™ Extra Virgin Olive Oil. Toss them gently to coat evenly. Sprinkle Member's Mark™ Garlic Pepper over the zucchini. Toss again to ensure all slices are well-seasoned.
  • Place the seasoned zucchini slices in a single layer in the air fryer basket. Avoid overcrowding. You may need to do this in batches.
  • Air fry the zucchini chips for 10-12 minutes, shaking the basket halfway through. Keep an eye on them toward the end, as cooking times can vary based on the thickness of your slices and the specific air fryer model.
  • Once golden and crispy, remove the zucchini chips from the air fryer. If you prefer them even crunchier, you can return them for an additional 1-2 minutes. Let the chips cool for a few minutes on a wire rack or paper towel to help them maintain their crispiness. Garnish with a little chopped parsley or parmesan cheese, if desired!
