Tips for Grilling Perfect Chicken Wings
Here are some great tips for grilling chicken wings so they come out crispy, juicy, and full of flavor every time:
Prep & Marinate
-
Pat them dry first — Moisture prevents crispiness. Use paper towels to blot them well before seasoning.
-
Marinate or dry rub —
-
Marinate: 2–4 hours in a mixture with oil, acid (like lemon juice or vinegar), and seasonings.
-
Dry rub: Toss wings with oil and your favorite spice blend (try paprika, garlic powder, salt, pepper, cayenne).
-
-
Bring to room temp before grilling — This helps them cook more evenly and prevents the skin from tightening too fast.
Grilling Method
-
Use two-zone heat —
-
Set up one side of the grill for direct heat (medium-high) and the other for indirect heat.
-
Start wings on the indirect side to cook through, then move to direct heat to crisp the skin.
-
-
Keep the lid closed — Traps heat and gives the wings a bit of smoky flavor.
-
Don’t overcrowd — Space wings out so air and heat can circulate evenly.
Cooking Time & Temp
-
Cook to 165°F internal temperature, but let them go to around 175–180°F if you like fall-off-the-bone tender wings.
-
Approximate timing:
-
20–25 minutes indirect heat
-
5–8 minutes direct heat for crisping and charring
-
Finishing Touches
-
Add sauce at the end — Toss wings in sauce after grilling, or brush on during the last few minutes so it caramelizes but doesn’t burn.
-
Let them rest 5 minutes — Helps juices redistribute and skin stay crisp.
-
Optional: finish over high heat or under the broiler for an extra crunch if needed.
Bonus Tips
-
For extra crispy skin, sprinkle baking powder (not soda!) into your dry rub.
-
Try wood chips (like hickory or apple) for a subtle smoky flavor.
-
If using a gas grill, keep the lid down as much as possible to retain heat.
