Raspberry Valentine Bellini

Celebrate Valentine's Day with a toast! This special Bellini features raspberry purée for a festive and flavorful touch. Cheers!

Ingredients
  

  • 6 oz Fresh raspberries plus additional for garnish
  • 3 tbsp Superfine sugar
  • 2 tbsp Water
  • tsp Fresh lemon juice
  • 1 bottle (750 ml) Prosecco chilled

Instructions
 

  • In a small food processor, purée raspberries, sugar, water, and lemon juice. Strain through a fine-mesh sieve, being sure to press the raspberries down to extract as much juice as possible. Discard solids.
  • Place 3 Tbsp. raspberry purée into 4 champagne flutes.
  • Slowly pour Prosecco to fill flutes halfway (Prosecco will fizz up). Stir to combine, then top off flutes with more Prosecco, stirring as needed. Garnish with fresh raspberries.
