Raspberry Valentine Bellini
Ingredients
- 6 oz Fresh raspberries plus additional for garnish
- 3 tbsp Superfine sugar
- 2 tbsp Water
- 1½ tsp Fresh lemon juice
- 1 bottle (750 ml) Prosecco chilled
Instructions
- In a small food processor, purée raspberries, sugar, water, and lemon juice. Strain through a fine-mesh sieve, being sure to press the raspberries down to extract as much juice as possible. Discard solids.
- Place 3 Tbsp. raspberry purée into 4 champagne flutes.
- Slowly pour Prosecco to fill flutes halfway (Prosecco will fizz up). Stir to combine, then top off flutes with more Prosecco, stirring as needed. Garnish with fresh raspberries.
