What is Pork Tenderloin?
Pork tenderloin is a long, narrow, boneless cut of pork that comes from the muscle running along the backbone of the pig. It’s one of the most tender and lean cuts you can buy.
Key things to know:
- Texture: Very tender (almost buttery when cooked right)
- Flavor: Mild, slightly sweet, takes on marinades and seasonings really well
- Size: Usually about 1–1.5 pounds and shaped like a thin log
- Fat content: Leaner than most other pork cuts
Don’t confuse it with:
- Pork loin – wider, thicker, and less tender (better for roasting longer)
Common ways to cook it:
- Roasting in the oven
- Searing + finishing in the oven
- Grilling
- Slicing into medallions and pan-searing
Cooking tip:
Because it’s so lean, it can dry out quickly—cook it to about 145°F (slightly pink inside) and let it rest before slicing.
