How to Select Artichokes
What a Fresh Artichoke Looks Like
- Tightly closed leaves
The petals should be compact and packed closely together. A wide-open artichoke is usually older and more mature. - Deep green color
Look for rich green coloring. A little purple tint is fine on some varieties.- Brown spots from light frost can actually make them sweeter.
- Avoid artichokes that look dry, gray, or heavily browned.
- Feels heavy for its size
A fresh artichoke should feel dense and solid, which means it still has plenty of moisture. - Squeak test
Gently squeeze it. Fresh leaves often make a slight squeaking sound because they’re crisp and hydrated. - Firm stem
The stem should look fresh, not shriveled or slimy. A fresh stem is edible too when peeled.
Avoid Artichokes That Have
- Split or spreading leaves
- Dry, brittle, or woody tips
- Mold near the stem
- A very light weight for their size
- Soft spots or a spongy feel
Size Tips
- Small artichokes are often more tender and great for roasting or grilling whole.
- Large artichokes work well for stuffed artichokes or steaming because they have bigger leaves and hearts.
Storage
Store unwashed artichokes in a loose plastic bag in the refrigerator. They’re best used within about 4–5 days.

Grilled Artichokes with Roasted Garlic & Herb Aioli

Ingredients
- 2 Lemons halved
- 4-5 Artichokes trimmed and halved
- 2 tbsp Olive oil
- 2 tbsp Weber® Roasted Garlic & Herb Seasoning
- Member's Mark™ Mediterranean Sea Salt Grinder
For the Roasted Garlic & Herb Aioli
- 1 cup Mayonnaise
- 2 tbsp Fresh lemon juice
- 1 tsp Lemon zest
- 1 tbsp Capers finely chopped
- 1 tsp Parsley finely chopped
- ½ tsp Garlic minced
- 1 tsp Weber® Roasted Garlic & Herb Seasoning
- ¼ tsp Ground white pepper
Instructions
- Bring a large pot of water to a boil and squeeze the juice of 1 lemon into the water. Add artichokes and boil for 10 minutes. Drain and pat dry.
- Meanwhile, in a small bowl, whisk together mayonnaise, lemon juice, lemon zest, capers, parsley, garlic, Weber® Roasted Garlic and Herb Seasoning, and ground white pepper. Cover and refrigerate until ready to serve.
- Preheat grill to medium-high heat (375°F–400°F).
- Brush artichokes with olive oil and season with Weber® Roasted Garlic and Herb Seasoning.
- Place artichokes cut side down on the grill. Cook for 5–6 minutes, or until grill marks appear and the artichokes are tender. Remove from grill and let cool slightly.
- Arrange artichokes on a serving platter and garnish with remaining lemon wedges. Sprinkle desire amount of Member's Mark™ Mediterranean Sea Salt Grinder over the artichokes. Serve with the lemon herb aioli on the side.
