Carolina Tangy Mustard Pulled Pork

This awesome recipe combines the flavors of Carolina-style tangy mustard bbq sauce with melt-in-your-mouth pork – it’s so easy that it will become a weeknight staple!  Weber® Tangy Mustard Carolina BBQ Seasoning, along with Member’s Mark™ Sea Salt and Ground Black Pepper, make for an irresistible flavor combo.  Try the pulled pork on some buns (we like brioche or even pretzel), or enjoy it on its own!

What is Carolina BBQ?

Carolina BBQ is a style of barbecue that comes from the Carolinas (North and South Carolina) and is famous for its slow-cooked pork, tangy sauces, and regional variations. Unlike other U.S. BBQ traditions (like Kansas City’s sweet, thick sauces or Texas’s beef focus), Carolina BBQ centers on pork, especially pulled pork, pork shoulder, or whole hog, cooked low and slow over wood or coals.

Here’s a breakdown of the main Carolina BBQ styles:

North Carolina BBQ

  • Eastern Style: Uses the whole hog. The meat is chopped and mixed together, then dressed with a thin, vinegar-and-red-pepper–based sauce. It’s tangy, spicy, and not sweet.

  • Lexington (or Piedmont) Style: Focuses on pork shoulder rather than whole hog. The sauce, called “dip”, is still vinegar-based but has ketchup or tomato paste added for a hint of sweetness and body. It’s often served with “red slaw” (coleslaw made with the same vinegar-tomato sauce instead of mayonnaise).

South Carolina BBQ

  • Known for its mustard-based sauce, often called “Carolina Gold.” This sauce blends yellow mustard with vinegar, spices, and sometimes honey or brown sugar. It’s tangy with a little sweetness, and pairs especially well with pulled pork. South Carolina also uses vinegar-based sauces in some regions, but mustard is its unique signature.

  • In a small bowl, mix together 3 tablespoons Weber® Tangy Mustard Carolina Seasoning and Members Mark™ Minced Garlic.
  • Season the pork all over with the mixture. Add salt and pepper to taste.
  • In a measuring cup measure out the 1/2 cup of stock and add 1 tablespoon of the Weber® Tangy Mustard Carolina seasoning, whisk together.
  • Pour the stock mixture in the bottom of the crock pot, place the pork in the crockpot. Add the onion to the sides of the pork.
  • Cover and let cook on low for 4 hours.
  • When the pork is done cooking, and has reached an internal temperature 190 degrees, remove to a large cutting board. Let sit for 20 minutes before shredding with a fork.
  • *Take the leftover liquid from the crockpot and strain it to remove any solids. You can add it to the shredded pork.
