Looking for the perfect side to accompany your favorite Mexican dishes? These Zesty Black Beans pack a ton of flavor, they’re easy to make, and they’re very cost-effective (something we can really get on board with right now)! They also make a great filling for tacos, burritos, and enchiladas, or try adding them on top of nachos!
If you’re looking to make these with dried black beans, it takes a little more time (you will probably want to begin the process the night before), but it’s a good way to control the flavor. Here’s how to do it!
Ingredients
- 1 cup dried black beans
- Water (for soaking and cooking)
Instructions
- Rinse and Sort: Start by rinsing the dried black beans under cold water. Remove any debris or damaged beans.
- Soak the Beans:
- Overnight Soak: Place the beans in a bowl and cover them with water (about 2-3 inches above the beans). Let them soak for at least 6-8 hours or overnight.
- Quick Soak: If you’re short on time, bring a pot of water to a boil, add the beans, boil for 2 minutes, then remove from heat and let them sit, covered, for about an hour.
- Drain and Rinse: After soaking, drain the beans and rinse them again.
- Then Cook the Beans as Directed Below! OR, you can do it in a pressure cooker:
- Pressure Cooker: Add soaked beans and water (1:3 ratio) to the pressure cooker. Cook on high pressure for about 20-25 minutes, then let the pressure release naturally.
Looking to add a little heat to the beans? Try adding some Member’s Mark™ Cayenne Pepper to the beans (maybe start with 1/4 tsp and work your way up). You can also try adding more Tone’s® Taco Seasoning to the beans as well!
